Beef brownie with Summer Squash..Yep Summer crops
Summer vegie patches seem to overflow with the good old Zucchini and button squash so why not make the most of this bounty!
Fritters, cakes, baked, BBq, fried, chutney....Brownies!
As usual this is a seasonal variety so once they are gone then that will be it until next summer harvest.
Vegie Patch Tip:
Button Squash and Zucch's tend to get a little large very fast if you don't pick them quick! Keep up with the harvesting and you will keep getting flowers and more fruit. Once the Zucchini get to cave man club size you are better off splitting them down the middle and scooping out the fully sized seeds. Process the rest of the fruit as you would or even peel off stripes of rind to reduce the toughness of the resulting end product.
