Well Summer is here and the Deer have headed up into the hills so no more Venisen Jerky for awhile.
Just as well we have Spring Lamb bopping around the paddocks and a couple of these have spent some time in the dehydrator.
The result is bags of jerky that smells heavenly of a Lamb Roast!
This Jerky is not as dry as the venisen and has a fat content even though the meat was very lean for Lamb.
Make sure you keep it in a cool dry place.
